In 1990, Christian Barrette and Hélène Lessard acquired a dairy farm that had been in the Barrette family for several generations. After reviewing a number of possibilities, they decided to turn the farm into an artisan cheese factory. The company opened its doors on September 26, 1996. The cheese-making couple specialize in making various types of cheddar, putting love and pride into all their products.
